As part of our 'Notes from Latin America', we are featuring the people who make up the La República family. In this interview, we speak to Ruby Zhang - the pastry chef dedicated to República del Cacao in China.
"When I opened a República del Cacao bag for the first time, I was instantly attracted to the unique flavor of its chocolate. After doing a fair bit of research, I discovered that the origin of cacao beans, climate, soil and production processes are the key points, which influence
the taste and quality of chocolate and contribute to making it so special. When I found out about where chocolate comes from, I had a strong desire to know more about cacao.
For me, República del Cacao means working with excellent and unique Latin American chocolates. When trying the chocolate, one will find a subtle taste and will discover its “layers”, like when you are tasting wine, one is rewarded with an initial taste, the flavor and an aftertaste.
