The valley where República del Cacao sources its milk is located at the foot of the 19,000 ft high Cayambe Volcano and lies between high mountains and green pastures, thus enjoying a unique micro climate, with cloudless sky, fresh air and the imposing Cayambe towering above. The small farming community we work with, is dear to our heart, it comprises a little more than 50 farms and about 500 happy cows. Here the local farmers quietly raise their cows who roam around organic pasture all year, free from hormones and antibiotics. Milking is, of course, by hand everyday of the year at 05:00 am and 5:00 pm. This sustainable milk is then brought to a small collection center down the valley, on foot or horseback. People here love their job & keep smiling to visitors, and children run around with cheeky laughs. This valley has an air of a lost paradise… the blessed country of pure Andean milk. After the required quality checks have been made, each batch is clearly identified & loaded on
a truck to be shipped to Quito. Upon arrival at the dairy factory and after further quality tests, our wholesome milk quickly goes through a process of pasteurization and drying.
